Who said courgettes were bland! Wait for the explosion of flavours in this soup.

 I can remember having courgettes as a vegetable about 25 years ago and wondering what use did they have in the food chain.  They were bland, soggy and repulsive.  At the time, my husband felt the same way, so it was years later before I decided to give them another go.  The first recipe I tried at that time was courgettes with pasta.  Wow!!  Since then I have made umpteen dishes using courgettes and they are often to be found on my shopping list. 

This was the first time I had ever tried courgettes in soup.  My daughter-in-laws father, Tubby, has an allotment.  This time last year he sent me a bag full of courgettes.  Some were quite large and I made my first ever Marrow Chutney with them.  Last week, he gave a bag full of this years crop to my daughter-in-law, who swiftly passed them on to me, in the hope that I could turn them into something interesting.

I have to say, I was quite wary of making this soup but, the weight of courgettes I was given was exactly the weight needed for the recipe.  Call me a fool, but I am a firm believer in fate, and this was kismet, so I made the recipe for lunch.  I am so glad I did.  What a fantastic explosion of flavour!  I think this will be a regular lunch time favourite for many years to come, especially on a miserable day like today.
